Maison Michaël is produced to one standard across two facilities: in France for the European Union and the Middle East, and in an FDA-approved plant in Canada for North America, South America and the Canadian market — so every region is served close to home, without compromise.

Organic farming & natural feeding

Sourced from ducks raised to certified organic standards and fed a controlled, cereal-based diet — primarily French-grown corn — in keeping with strict husbandry and feeding protocols. No GMOs and no antibiotics are used at any stage, ensuring full traceability and consistent premium quality.

En terrine

Defrost 24 h refrigerated, separate the lobes and devein. Season (12 g salt / 3 g pepper per kg). Cook in a bain-marie at 90 °C for 50 minutes; cool, then rest 24 h refrigerated before serving.

En escalope

Slice into escalopes of 2 cm. Sear in a hot pan over low heat, 2–3 minutes per side. Season at the very end of cooking and serve at once.
