KOSHER CERTIFICATION & RABBINICAL SUPERVISION

Maison Michaël products are prepared in France under strict kosher standards, with rabbinical supervision conducted in full compliance with both religious law and French and European regulations.

Religious supervision is provided by Grand Rabbi Nechemia Rotenberg, Rabbi of the Jewish Community of Vienna (Austria) and an official representative of the Chief Rabbinate of Israel. The supervision framework applied is the “Mehadrin – Harav Nechemia Rotenberg” certification, a recognised kosher standard implemented across multiple European Union member states.

All ritual slaughter operations are carried out at Euralis Gastronomy (Lescar, France), an approved establishment operating under the oversight of French veterinary authorities. The process is authorised in accordance with Regulation (EC) No. 1099/2009 and Article R.214-70 of the French Rural and Maritime Fishing Code, which recognise ritual slaughter performed under religious supervision as a lawful and protected practice in France.

Slaughter is performed without prior stunning, in strict accordance with Halakha (Jewish religious law), by a shohet authorised by the Chief Rabbinate of Israel, and under direct rabbinical supervision. No electrical, mechanical, or gaseous stunning is applied prior to shechita, in line with kosher requirements and the approved legal framework.

In parallel, all operations comply with French and European standards for hygiene, food safety, animal health, and traceability, ensuring that kosher integrity is maintained without compromising regulatory compliance. Each production batch is fully traceable from slaughter through processing and distribution.
